A Breath of Fresh Air
So Hubby and I love camping, but we have a very difficult time getting ourselves motivated to get out the door and do it! We actually toyed with the idea of camping in our back yard…but we would go all the way to the back fence so we would be less tempted to sneak into our big comfy bed at night 🙂
Finally, we got our butts out the door for some good CO Mountain Air! Thanks to Brandon and Caitlin, our friends from work, we had a reason to commit! (and not resort to the back yard :-))
We headed up to Monument, CO (a local town just north of the springs) for a quick and easy campsite. A favorite of mine from college, Mt. Herman Road, is a great spot to go camping for a one-nighter. Usually we have to drive at least an hour to get to an official campsite. Only camping for one night makes it less appealing to drive that far. This was the perfect spot! (minus the copious amounts of Coors Light cans…this is also a local hot spot for underage drinking)
We set up camp and got to what camping is all about…THE FOOD!! We brought our Coleman Road Trip Grill and roasted up some GF Chicken Sausages and reheated some leftover Frogmore Stew I had (and couldn’t let it go to waste! You know me and leftovers ;-)) It was delicious! Brandon and Caitlinbrought the good stuff: wine and cheese! We camped like royalty 🙂
We also learned to play Euchre (yoo-ker), which was a blast!

Looks like an awesome trip!!! Definitely jealous that the mountains of CO are you backyard 🙂 We do have Maine and New Hampshire here in New England, which are beautiful and we definitely don’t utilize enough! Hopefully we will get in some warmer weather hiking and stuff in before the cold and ski season sets in 🙂
Emily, its hard to get the motivation to get out there, but its awesome when you do!

I love to camp. My family used to go camping every summer.
How fun!! I haven’t been camping in AGES and I miss it like crazy!! You are so lucky to have great campsites close by… I’m sure I could find SOMETHING around here but it certainly couldn’t compete with Colorado or the west coast :p
It’s been such a long time since I camped.. 1,5 yrs ago? and I don’t if it counts as camping because we were at a festival but we did sleep in a tent.
I’d love to again and properly this time, with good food and a grill of course 😀
