Meals As of Late

Lately, Hubby and I have been doing some super easy Meal Planning through Wellness Mama!  She has a meal planning service, and also some sample meal plans with shopping lists already available.  We’ve been doing the free version for now, and I’m hoping to put together my own meal planning options once I get my blog self-hosted 🙂  Here is what we’ve been eating!

This steak salad was delicious!  Hubby cooked the flank steak on the stove top and roasted the peppers in the oven.  Barely ANY cleanup!

Baked Pork with Apples and baked zucchini and salad on the side.  We used our Pork Tenderloin instead and roasted it in the oven with apples.

And this one was the meal of the century!!  Healthy Chicken Carbonara…insanely good!  It made a ton of food and we’ve been eating it for a few days 🙂

Sauteed asparagus, sauteed spinach, bacon and roasted chicken over a bed of spaghetti squash.  How can you say no to that!?!

Meal planning is relatively simple.  The trick is to build up a repertoire of simple and quick recipes that you can group together.  In any given week, my meals will rotate between beef, chicken, seafood and possibly vegetarian options.  Each meal has a veggie if not two and if you are on a weight loss plan, then simply cut out fruits and starchy veggies and watch your portion size.  Once I get my recipe page sorted out, I’ll plan to create a Meal Plans page where I will have a full menu plan for an entire week (to include breakfasts, snacks, lunch and dinner!).  This is a HUGE undertaking, so be patient please 🙂
