What Do You Do When…

You have copious amounts of corn tortillas??? MAKE SPICY FISH TACOS!

These were UNBELIEVABLE! Recipe…? My own!

Spicy Fish Tacos

– 6 corn tortillas

2 tilapia filets

– 2 tbsp mayonnaise

– 2 chilies in adobo

– 2 tsp cayenne pepper

– 2 tsp cumin

– 1 tbsp honey

– 1 tbsp lemon juice

– 1 cup shredded cabbage

– 1 cup tomatoes

Directions: Dust your tilapia in cayenne pepper, cumin, and chili powder.  Pan sear your tilapia in a saute pan coated with cooking spray (we use our Misto filled with EVOO) for about 3-4 minutes per side, or until cooked.  You want your fish to fall apart when you pick it up! While the fish is cooking mix together your mayonnaise, chili in adobo, lemon juice, cayenne pepper, honey, and cumin.  The sauce should be on the thinner side.  Wrap tortillas in a paper towel and microwave for 1 minute.  Top tortillas with fish, cabbage, tomatoes and spicy sauce.  Enjoy!

Served up with a delicious side of roasted brussels sprouts!

So, I had a 90 minute massage today (its been about 2 weeks since my last) and it was sooo painful!  Guess that is what I get for running 45 miles this week and not necessarily taking the time to stretch…oops

How often do you get massages?  I’m a glutton, but I have also found that it keeps me going strong during my distance training.  I get hurt less often and feel better during the duration!
