Stuff Me Silly!

I love bell peppers, especially because they are always great to have around for last minute meals.  You can always stuff a bell pepper with leftovers and create an entire dinner masterpiece in a matter of seconds.

Here I took brown rice and mixed it with lentils, stuffed my pepper and topped it with feta cheese.  Baked for about 20 minutes at 475 degrees and a brand new meal is ready right before your eyes!

I also had some lentil tempeh chili on the side and roasted broccoli.  Can’t forget the cornbread for sweetness 🙂

Thank you, bell pepper!  You always make quick easy meals look like they took hours 🙂
