Chikn and Peas, Please!

This dinner had Hubby and I drooling all over ourselves!  Three cheese pasta with chicken, tomatoes, mushrooms, and peas!

Not only is pasta always a quick fix meal, but this one was especially fast!  I’ve been hooked on buying rotisserie chickens from Costco…$4.99 and gluten free!!  The whole chicken can feed Hubby and I for almost 4 meals!

Three Cheese and Peas Pasta

– 2 cups of pasta (GF of course)

– 1 cup shelled peas

– 1 cup mushrooms, chopped

– 2 cups chicken

– 1 cup cherry tomatoes, sliced

– 1/2 cup mozzarella

– 1/2 cup parmesan

– 1/2 cup feta cheese

– Olive oil cooking spray

Directions: Bring your pasta water to a boil.  Meanwhile, saute your veggies all together in olive oil cooking spray.  Boil your pasta and add to the veggie mix with a bit of pasta water to steam out your veggies.  Add in your cooked chicken or meat of choice and your cheeses.  Stir until combined and melted nicely, serve up hot!

This is on par with glorified mac n’ cheese!  Hubby and I loved it 🙂

This meal lasted us for several days!!  Do you cook for more than just yourself?  Even before I was married I cooked for four and ate leftovers!!  Such an economical way of cooking 🙂 What are your thoughts?
