Cajun Spiced Tilapia!

Today was fantastic 🙂 Got in a great yoga class and have centered my qi (pronounced “chi”, did you know that??!!). For dinner, we were having cousin Abby over and being a vegetarian/pescetarian, I wanted to be able to cater to her dietary needs.  I think those of us with dietary restrictions try to cater to this more than most!

This meal was a bit inspired by my friend Dana’s Fish Tacos…they were awesome and I wanted to try to recreate it!

Cajun Spiced Tilapia

– 2 tsp cayenne pepper

– 2 tsp smoked paprika

– 2 tsp garlic salt

– 2 tsp brown sugar

– 1 cup corn meal

– 2 eggs

Directions: Preheat your saute pan to medium high heat.  Meanwhile, sprinkle the above spice mixture over your fish.  Then dredge your fish in egg, and coat with cornmeal (for more flavor, double the above spices and coat on the fish before the egg and mix the second half in with the cornmeal).  Place the fish into the hot saute pan along with 1 tsp of olive oil.  Pan sear fish on both sides, should be about 2-3 minutes per side and the fish will be nicely caramelized.  Serve hot, and enjoy!

Sides consisted of roasted sweet potatoes tossed in truffle oil, sea salt, and parsley, and…

Collard greens!  I mixed these with chili garlic sauce, onion, dried blueberries/cranberries/strawberries, and raw honey.  Fantastic!

This dinner was the perfect way to round out the day…and Abby liked it too!

What is your favorite way to cook fish?  For me, it depends on the fish…salmon=roasting, and flaky white fish=pan searing!
