Sweet Dijon Salmon

Before you judge…

Let me explain!

So, Hubby and I were craving some cedar plank salmon.  I soaked the cedar planks for 4 hours, placed them on the grill, topped them with salmon and coated the salmon with dijon and a sprinkle of brown sugar…from then on, I will not be held responsible!  Apparently, these should cook with the drill top open…otherwise they will be set ablaze!

However, they still tasted fantastic!   We laid them over a bed of quinoa pilaf and had some grilled asparagus on the side. Delish!

We also had to get rid of some cherry tomatoes and cucumbers, so  I made a salad with Garlic Gold Meyer Lemon Vinaigrette.  It was fantastic!

Have you ever thought you screwed up a recipe and then it turned out to be awesome?  Can’t wait to hear about it 🙂
