Finally, Good Mahi Mahi!

How many of you eat Mahi Mahi?  Can I get a show of hands?  Well, Hubby bought a giant pack of frozen Mahi Mahi at Costco and I’ve managed to destroy each and every one of them in the cooking process.  Don’t go thinking I’ve thrown them away, no way!  We simply ate terribly cooked fish 🙂

Hubby, being the genius grill master he is, decided that we should grill our last batch of fish, and ta-dah!! Brilliantly cooked fish!!

Dinner was grilled fish, steamed green beans, and wild rice pilaf…perfect midweek meal and very simple!

What is your favorite easy meal?? Any tips for cooking delicate fish?

    What a delightful dinner indeed! We can’t find mahi – mahi over here!

    MMMMMM,…I love to season the fish well on both sides of the fish fillet & then dip the fish into millet flour , on both sides & shake off any excess. Then fry it in a hot pan with a fruity olive oil. So, your fish won’t break & will be nice golden brown in colour on both sides!

    You can also marinate a fish fillet, but if there is orange juice or lemon juice in the marinade, don’t marinade it for longer then 30 minutes.
