Taste the Rainbow

This dinner was so tasty!   A beet orange salad and a shrimp scampi (essentially) over a bed of quinoa.

I bought these precooked beets at King Soopers called Melissa’s.  They tasted great and were cooked perfectly!  About a dollar more than I would have paid, but worth saving me from cooking them and getting red fingers!  I took 3 beets, chopped them up, mixed them with 3 chopped clementines and dressed them in a EVOO, orange juice, sea salt, and pepper dressing….so good!

The shrimp were sauteed in EVOO, garlic, onion, chickpeas, spinach, and at the very end, I added in lemon zest and juice and a tbsp of butter.  It really rounded out the sauce!  Over the quinoa made this dish exquisite 🙂

Hubby loved this dinner too 🙂  and Beau wanted some, but we are trying our best to keep him from ever eating table scraps!! Don’t want to start any bad habits 🙂

    Ooh! I love the idea of a beet salad over quinoa! I am loving the colorful pictures!
