Black Bean and Sweet Potato Tacos!

I did not expect this combo to fly, but it sure did!  Clean Eating Magazine has its head on straight!  I just took sweet potatoes, black beans, cinnamon, and cumin and tossed them together and placed them on 2 corn tortillas, topped them with 1 oz of aged cheddar and 1/4 cup of guacamole.  This burrito/taco was to die for!

I had a side of nutty kale 🙂 This meal knocked me out!

No seriously…Beau too! How cute is he!?!
