Curried Chickpeas with Spinach

This is our second night of clean eating and once again, LOVING IT!  This meal was super easy (15 minutes) and completely delicious.  Since we ran out of spinach, we supplemented the meal with leftovers (curried tempeh, brown rice, roasted tofu/sweet potatoes/brussels sprouts).

Oh yes, and my sweet and sour meatballs 🙂 Forgot about those! Those were awesome, check the link for the recipe!!

Ok, so here is the recipe you were waiting for!

Curried Chickpeas and Spinach

(serves 2)

– 1 tsp garlic, chopped

– 1 onion, chopped

– 2 tsp olive oil

– 2 cans chickpeas, drained

– 4 cups spinach

– 1 tsp cumin

– 1 tsp sweet paprika

– 1/4 tsp coriander (we used Garam Masala that has coriander in it)

Directions: Saute onions and garlic in olive oil until translucent.  Add in chickpeas and spices and saute for about 4 minutes or until warm. Lastly add in spinach until slightly wilted.

To beef up the recipe, add over a bed of brown rice!

    I love the chopsticks! Are you doing a clean eating challenge? Or just changing up your lifestyle?

      Alyssa, I love clean eating, but never had everything on hand! Seemed like a good time to start up (pantry was waning) and after the holidays 🙂 I love eating with chop sticks! Slows me down!
