I Want Chicken Fingers!

After watching my fair share of Paula Deen’s Home Cooking, I wanted me some Italian Chicken Tenders! 🙂

Although Hubby made these (and he did an AMAZING job), I must admit, I was the mastermind 🙂

I crafted this recipe:

GF Chicken Tenders

– 2 chicken breasts (boneless/skinless), sliced into tenders

– 1 bag of Glutino Crackers, finely crushed

– 2 eggs, whisked

– Italian seasoning, to taste

Directions: Preheat your oven to 375 degrees. Take a cookie sheet and line it with foil, then take a cooling rack and place it atop the cookie sheet.  Next, take your chicken tenders and coat them in the egg wash. Then roll them in the crumb/Italian seasoning and place them on the cooling rack. Bake at 375 for 20 minutes, or until cooked through. Enjoy!

These were fantastic! Dipped in BBQ sauce, plain or any other dipping sauce :0) Hubby also made roasted brussels sprouts and a cranberry quinoa pilaf. Best meal ever!
