Deconstructed Steak Dinner!

Hubby and I had leftover steak from our Steak Dinner a few nights back and needed to find a way to eat it all up! I had a novel idea to make a Truffle Vinaigrette and so I did! However, we thought making it creamy would be perfect 🙂

Truffle Mayonnaise

– 3 T Truffle Oil

– 1 T Champagne Vinegar

– 2 t dried parsley

– 2 egg yolks

Directions: Create a double boiler (I use a pot with water and a metal mixing bowl on top) and add oil, vinegar, and parsley and whisk to combine. Before the bowl gets too hot, add in your egg yolks and continue to whisk quickly. As the heat rises, the eggs will begin to cook slightly and thicken. Whisk until the consistency is that of a thick pudding…and there you have it! A healthier version of mayo, and it tastes like truffles 🙂

Hubby built a salad with these delicious morsels our friend Dana gave us…Holiday Spiced Nuts!


On top of the salad…well went the steak 🙂

I also threw in some leftover brussels sprouts and topped it with the Truffle Vinaigrette. Soo good! This meal filled me to the brim!
