More Soup? Really?!?

You’re probably wondering how it is possibly for one person to eat so much soup?? Well, when you aren’t feeling your best and it is blizzarding outside, soup is the next best thing!

Momma M gave Hubby and I a boatload of Frontier Soups, which we were so grateful for! Not to mention, they are all Gluten Free! Woohoo!

Served up with a side of leftover roasted veggie medley for a bit of crunch 🙂 I used the celery leaves in this medley and they added so much flavor! Never discard these little treasures!

The soup was called, Holiday Gathering Cranberry Bean Soup. It was fantastic! I will list out the basic recipe, but you really need the bean mix to re-create the exact thing 🙂

Holiday Gathering Cranberry Bean Soup

– Soup Mix

– 8 C Chicken or Veggie Broth

– 2 T Olive Oil

– 1 Large Onion, chopped

– 1 lb Turkey Sausage (I used Amylu‘s Chicken Meatballs chopped!)

– 1 10 oz box of frozen spinach

Bean Prep: Rinse, drain, and comb through the beans. Place the beans in a bowl and cover with water; soak for 2 hours at room temp. Drain the beans and place in a large pot with 2 qts fresh water. Bring the beans to a boil, then lower to a simmer and cook for 1 hour covered. Turn off the heat and let stand until ready to use.

Preparing the Soup: In a large soup pot, heat up your oil and saute your onions for 5 minutes over medium heat. Next add your sausage and cook for 5 minutes. Then stir in the seasoning mix. Add the broth and drained beans and give the mix a stir. Bring to a boil, reduce heat and simmer covered for 1 hour.  Add spinach last and simmer gently uncovered for 10 minutes. Serve hot!

This meal was very hearty! I almost made it through the whole way without feeling sick…on the upswing!
