Paradise Bars

Before I was diagnosed with Celiac Disease, one of my favorite desserts were Paradise Bars from Chili’s!Ā  It is basically a blondie/cookie/coconut bar topped with vanilla ice cream, caramel sauce, chocolate fudge, and chopped walnuts. Oh yea…it’s that good!

I knew that Celiac Disease couldn’t hold me back šŸ™‚ I created a gluten free version of Paradise Bars.Ā  This recipe is soooo simple!

Paradise Bars (Gluten Free)

– 1 box of Betty Crocker Gluten Free Cookie Mix

– 1 stick butter, softened

– 1 tsp vanilla extract

– 2 eggs

– 2 tsp coconut extract

– 1/2 cup shredded coconut

Directions: Follow the box! Just add in the extra coconut extract and shreds šŸ™‚ Then grease a 8×8 baking pan and spread the cookie dough in there like you would brownies. Bake for 25 minutes at 350, let cool, and cut into squares. Eat plain or with ice cream and toppings.

    So yea, totally doing these pronto! Its funny, I’ve made better things at home than in restaurants! I need to find a way to make gluten free monkey bread!

    YUM Sounds delicious!!

    There have been many things that I have seen or eaten at restaurants that I would love to re-create. I guess I better get in the kitchen and start practicing šŸ™‚
